Ive done 2 VWs around that year. Very easy you wont have mush trouble. Cant remember how it was attached but I remember being very surprised how easy it was to replace.

Hey @Pitt_Boss sorry to hear you ran in to trouble here. 1/2" foot clearance is pretty standard. When I make sunvisors with vinyl or leather I dont use any foam. Oh boy... I think your in for a big project unfortunately. Those panels look like the material was vacuum formed to take the shape. Some of it you will be able to wrap with vinyl no problem but other parts you will probably need to add seams to get it fitting without wrinkles....
